Why not? Noel started a big variety patch of lettuce, so much, that we’ve shared a lot with friends and neighbors. He also said, "Feed it to me for breakfast, lunch and dinner."

So that’s what I’ve done. Today for breakfast we had scrambled eggs, toast and lettuce with freshly picked peas, strawberries, chives and feta cheese. Some mornings it’s bagels with peanut butter, oranges and salad.

I usually pick enough lettuce to last us two or three days. Then I triple wash it, spin it dry and chill in the fridge. If I don’t have my vinaigrette dressing already made, I just toss the lettuce in a big bowl with a splash of olive oil and a smaller splash of vinegar, salt and pepper. Then I put the lettuce on individual plates and ‘artfully’ arrange the toppings.

It’s not too late to start some salad greens though you may have to start the seeds indoors because they don’t germinate well in hot weather.
