We had another beautiful harvest of sweet potatoes this year. We have had the best luck with the jewel variety. Noel gets his starts from 2-year-old sprouted potatoes, though any part of the potato under the right conditions will form a new plant.
This year, we ended up with around 100 pounds of potatoes from 18 plants. We harvested them in late September rather than waiting until October just before the first frost. The potatoes were not as big as usual, but they had very little critter damage and no vole nests under the black plastic. Even though the voles are out there, I’m thinking that they make their nests by a food source when the weather gets cold; otherwise, there is plenty to eat along the way.
Below, I’ve highlighted a few sweet potato recipes posted over the years. I’m sure there might be one or two that you might like. Experiment!!
