I made this dish with frozen green beans. Peapods, cauliflower, or broccoli
Almond Tofu Veggie Stir Fry
2 T. Olive Oil, divided
½ cup raw almonds (cashews, walnuts, or nuts of your choosing)
8 oz firm tofu
2-3 T. Tamari or soy sauce, divided
½ cup sliced mushrooms
½ cup sliced onions, red or yellow
½ pound veggies (fresh or frozen green beans, broccoli, cauliflower, or whatever you
have)
2-3 cloves minced garlic
1 tsp grated ginger
1 cup veggie broth
1 T. cornstarch
Press and cube the tofu into ¾” pieces. Toss with 1 T. Tamari and a drizzle of toasted
sesame oil. Set aside to marinate while preparing the rest of the ingredients.
Add 1 T. olive oil to pan and sear the tofu, then add the onion, garlic, and ginger paste
and stir for about a minute. Add the mushrooms, veggies, and broth. Cover and simmer
for 2-4 minutes or more, depending on whether you used frozen or fresh veggies.
over rice or grain of your choice. Eat well and drink well.

sesame oil. Set aside to marinate while preparing the rest of the ingredients.
Preheat 1 T. olive oil in a cast iron pan to medium heat. Toast the almonds for about 1
minute, tossing them constantly so they don’t burn. Remove from pan and set aside.Add 1 T. olive oil to pan and sear the tofu, then add the onion, garlic, and ginger paste
and stir for about a minute. Add the mushrooms, veggies, and broth. Cover and simmer
for 2-4 minutes or more, depending on whether you used frozen or fresh veggies.
Thicken the sauce with 1 T. tamari mixed with 1 T. cornstarch and cook for 1 minute
more. Drizzle with a little more toasted sesame oil and top with the almonds. Serveover rice or grain of your choice. Eat well and drink well.
If you happen to have some cilantro or green onions, they would work well as a last
minute add on.
